The Abu Dhabi Food Control Authority (ADFCA) in the United Arab Emirates has announced new HACCP requirements for all food businesses. For catering and food service businesses this will mean using the ‘new method’ as recognised by the Codex Alimentarius of the United Nations (UN).
ADFCA is aligning Municipality inspection of food service and catering businesses with the framework of the new method. ADFCA is also setting similar requirements for commercial training, consulting, audit and certification.
Menu-Safe meets these new ADFCA requirements. Many Abu Dhabi businesses are adopting the Menu-Safe solution, ranging from QSR chains to five star hotels and luxury beach clubs.
Subway in Dubai are conducting an integrated Menu-Safe and Person-in-Charge (PIC) training program.
As part of Subway’s ongoing Menu-Safe implementation into stores across Dubai (in addition to elsewhere in the UAE), trainer Shaina Oakden has merged the delivery of Menu-Safe Management Training with PIC to great effect.
According to Shaina:
“We get a lot of benefit from merging these training courses. For example it saves a lot of time and cost. Also, there is a lot of overlap between Menu-Safe Management and PIC requirements. By linking the training, our trainees gain multiple skills and knowledge, and can put them into practice as Menu-Safe food safety management PICs.”
Shaina Oakden, Subway Menu-Safe and PIC Trainer, receives UK Ofqual-accredited Level 3 Food Safety certificates for Subway PICs from Chris Young, Chief Executive of Future Awards and Qualifications.

Two Burger King outlets in Ras Al-Khaimah (RAK), UAE, have successfully passed an accredited HACCP audit for their Menu-Safe implementation.
This was the first HACCP certification for Burger King in the region, which represents a significant achievement for the brand.
Enrico Lopez, Training Specialist at First Food Services said:
“The program increased our understanding of the HACCP principles. We initially thought that this will be hard, but Menu Safe HACCP made it easy for us to implement and when it comes to training it’s all about simplicity, easy execution but strong system.”
Burger King is also the first QSR brand to meet the new HACCP requirements of RAK Municipality. Fawaz Abdullah, RAK Food Control Section manager:
“This program is not just a certificate, it took management commitment to be implemented; I hope that all labors of burger king will achieve this style.”

The Arabian Park Hotel in Dubai has successfully maintained HACCP certification following an audit of their Menu-Safe HACCP system.
Managed by Chef Angelo Albera, the HACCP implementation at the Arabian Park Hotel was first certified in 2010.
Galfar, industrial caterer in the Sultanate of Oman, has received HACCP certification for their Menu-Safe HACCP implementations.
The two sites are at Nimr (originally certified in 2010) and Nizwa, both in the Sultanate of Oman.
Apex Food Consultants have become a new Menu-Safe partner.
Apex Food Consultants are a provider of food safety and HACCP training and consulting in the United Arab Emirates.
Judy Sebastian received the Menu-Safe Train-the-Trainer course, and is now approved to provide Menu-Safe Management courses to Apex clients.
Venky's is the brand of a new chain of QSR chicken restaurants being opened in India by VH Group.
Venky's staff received Menu-Safe Management training at Campden BRI, the UK provider of Menu-Safe.

Hygeia trainer Aby Sam undertook the Menu-Safe Trainer course, delivered by Dr Joanne Taylor.

First Food Services LLC, the company responsible for the Burger King and Texas Chicken restaurants in the United Arab Emirates have gained an approved Menu-Safe Management trainer, Enrico Lopez.
Enrico completed the Train-the-Trainer course delivered by Dr Joanne Taylor.
The team at First Food Services will now proceed to implement Menu-Safe in Burger King and Texas Chicken outlets.
Emirates Fast Food, the company that manages McDonalds restaurants in the United Arab Emirates have gained an approved Menu-Safe Management trainer, Hamza Menikh, following the completion of a Menu-Safe Train-the-Trainer course.
Hamza attended the four day course, delivered by Dr Joanne Taylor, at the Dubai Men's College in the UAE.
Hamza and the team at McDonalds plan to begin with an implementation in Ras Al-Khaimah in the Northern UAE.
Industrial caterer SJ Abed has successfully received HACCP certification for three kitchen units in the Sultanate of Oman.
The three kitchens, at Marmul, Kauther and Lekhwair received audits for their Menu-Safe system implementations earlier in 2011.
GEMS Quality Consultants are a new Menu-Safe partner.
The team at GEMS provide HACCP and food safety training, in addition to food safety management system implementation consulting to clients in the GCC.
Approved Menu-Safe Rajesh Padmanabhan is qualified with an MSc in HACCP following studies with the International Centre for HACCP Innovation at the University of Salford in the UK.
The Medzo fine dining restaurant in WAFI, Dubai successfully underwent audit for their Menu-Safe implementation.
This achievement adds to the existing certification of other units in the WAFI complex: Seville's, The Square and the pastry kitchen.
The Subway® outlet in Khalifa, Abu Dhabi, UAE has received HACCP certification for their Menu-Safe system implementation.
Dr Jerry Taylor said:

The Five-Star restaurant in Buhaira Corniche in Sharjah, UAE, has successfully maintained the HACCP certification of their Menu-Safe HACCP implementation.
Industrial caterer NCC has gained HACCP certification for their Menu-Safe implementation at their camp at Marmul in the Sultanate of Oman.
Originally certified in January 2009, NCC represents the longest standing Menu-Safe user certified with HACCP.
Industrial caterer Ofsat has successfully extended HACCP certification to the Menu-Safe implementation at their Senior Staff Mess.
This follows the successful certification of the residential camp in 2010.
Ofsat's overall implementation began with training received by Fran Collison at Food Safety Consultancy in Muscat, Sultanate of Oman.
The Subway® outlet in Khalidiya, Abu Dhabi, UAE has successfully received HACCP certification for the implementation of Menu-Safe.
Subway is the first business to gain Menu-Safe certification in Abu Dhabi. This follows the certification of the Subway Dubai Internet City store in Dubai in 2010.
